This recipe is delicious, super easy to make, freezes well and is the perfect lunch or dinner addition,
INGREDIENTS
140g frozen peas, defrosted⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp wholemeal self-raising flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
60g cheese, grated (cheddar or parmesan)⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 eggs⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp almond meal (or linseed meal if there's nut allergies)⠀⠀⠀⠀⠀⠀⠀⠀⠀
A small handful of herbs (flat leaf parsley is great) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tsp olive oil⠀⠀
METHOD
Mash peas roughly. Mix flour, meal, cheese, eggs, almond meal and herbs into mashed pea mix.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Grease Silipod tray with oil.
Spoon mix into tray, pop in the oven for 20-25 minutes, test with skewer to ensure cooked through.
Allow to cool for 15 minutes, then eat!
