We love a good pie for dinner! With our Cottage Pie Pods recipe, you will always have a delicious dinner in the freezer.

2 medium carrots, peeled, finely chopped

2 celery stalks, finely chopped

1 large potato, peeled, chopped

200g pumpkin, peeled, chopped

400g mince (any mince works, we use lamb or beef)

2 tbsp tomato paste

1 tbls olive oil

2 cloves garlic, crushed

1 1/3 cup beef stock

1/2 cup frozen peas

50g cheese, grated

Preheat oven to 180C/160C fan-forced. Heat oil in a large non-stick pan. Add garlic, herbs, carrot and celery. Cook until onion is soft. Increase to high heat, add mince. Stir with a wooden spoon to break up mince until browned, stir in tomato paste and stock. Reduce heat and simmer covered, for 15 mins or until thick.

Boil potato and pumpkin in large saucepan until soft, add peas for 1 min, then drain. Return to pan. Add half the cheese, mash until smooth.

Grease Silipod tray (we use olive oil spray). Place mince in Silipod, filling to about 3/4. Fill remainder with mash. Sprinkle with remaining cheese. Place in oven with lid OFF, then bake for about 25mins or until cheese is melted and golden. Allow to cool, then place in the freezer for ready made dinners!
