CHICKEN & ROAST VEGIE PODS

It's common in our house to roast a large tray of chicken and vegetables on a Sunday, partly because it means we have fast dinners midweek [at least for a few days, early in the week]. ⠀

When there's leftovers, we finely chop the chicken, mash the veg (see suggestions below), then mix together and fill a Silipod tray.

They then go in the freezer, ready to pop out on those nights we need dinner on the table fast.

INGREDIENTS

Some of the yummier roasted veg combinations we've done are:

  • sweet potato, carrot & cauliflower 

  • carrot, parsnip & broccoli

  • beetroot, cauliflower & swedes.

 

TIP: once frozen, pop them out of the Silipod tray and store in an airtight container or freezer bag.

PORTIONS

For littlies, this recipe is great with:

  • 1 chicken & vegie pod
  • 1 steamed rice pod. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

 

For adults (or big eaters) you can do:

  • 2 chicken & vegie pods
  • 2 steamed rice pods ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
